Our meatball recipe is kept simple by using 100% ground beef (mince). Good quality beef topped with a quick but delicious tomato sauce (click here for the Italian tomato sauce recipe) makes a superb full meal or smaller portions make a great starter. They can be prepared in advance and frozen or left simmering on the hob for several hours in the tomato sauce

Expert Advice for Meatballs
If using fresh rather than dried herbs for this meatballs recipe then chop them
finely and double the quantities. Chop the onions up as fine as you can (see
below) to help the meatballs keep their shape.
If you don't have any dried bread then place the slices under a low heat grill
for a minute or so to dry them out.
STEP1 - PREPARE MEATBALLS
Onions - chop finely.
Garlic - chop finely.
Eggs - lightly mix together with a fork so that the whites and
yolks are blended together.
Bread - rub the bread with your hands to form bread crumbs.
STEP 2 - FRY ONION & GARLIC
Turn the heat to medium, add two tablespoons of olive oil to the frying pan and fry, turning often, until the onions and garlic are soft. This should take eight to ten minutes.
STEP 3 - MIX INGREDIENTS
With the exception of the remaining olive oil and the minced beef, mix all
the ingredients (including the onions and garlic) in a food blender (10 seconds
or so) or with a fork.
Add the minced beef to mixture and mix it all together thoroughly with a fork.
STEP 4 - FORM THE MEATBALLS
Take enough of the meatball mixture to form about the size of a golf ball, dip your hands in water and form the mixture into small balls. The ingredients should give you roughly 30 small meatballs.
STEP 5 - COOK THE MEATBALLS
You'll probably need to cook the meatballs in two batches unless you have a
very large pan. Place the frying pan on a medium heat and add the remaining
olive oil. Add the meatballs and cook them for about ten minutes turning
frequently.
If using the meatballs in the next hour or so, then keep them warm in the oven.
Alternatively if you have prepared our Italian tomato sauce then pour the sauce
over the meatballs and cook on a medium heat for another 10 minutes.
